Grandma Helen's Cheesecake


Helen's Cheesecake recipe is guaranteed to launch a thousand ships. This will be the best cheesecake to ever land on your lips. It comes from my grandma Helen. My brother asks her to make it every time that we come over for dinner.

Last week was Josh's birthday and he is not a big sweet fan, but he loves cheesecake. He wanted a cheesecake birthday cake and so I decided I would ask my grandma for the recipe. Here it is!!! YOU'RE WELCOME

Crust:
18  Graham Crackers, crushed
1 Tablespoon Sugar
3 Tablespoon Melted Butter

Filling:

1 Cup Granulated Sugar
24 Ounces Cream Cheese
5 Eggs
1 1/2 Teaspoons Vanilla Extract
1 Tablespoon Fresh Lemon Juice


Topping:
1 Pint Sour Cream
1/2 Cup Granulated Sugar
1 1/2 Teaspoons Vanilla Extract

Directions:

Crush the Graham Crackers. Mix together the crust ingredients and press into a 10-inch springform pan. I recommend putting the crust ingredients in the springform pan and mix it there.

In mixer or food processor mix together the sugar and cream cheese. Add the eggs, one at a time in about 30 second intervals. Mix in the vanilla extract and fresh lemon juice. Let the mixer whip the filling for a good 5 minutes on a level 2. You can't over mix it, so make sure it's nice a fluffy. Pour into Springform Pan.

Bake in a preheated 300 degree F oven for 1 hour to 1 hour and 10 minutes, until set and puffed. Remove from oven.

Mix together the sour cream, granulated sugar and vanilla together. Use a spatula to spread the topping. Return to oven for 10 to 15 minutes.

Remove from oven and let it chill in the refrigerator.

Before serving remove the springform pan and add a fruit topping of your choice.
